Authentic Pad Thai Recipe - EASY ⭐️⭐️

Pad Thai is a stir-fried rice noodle dish that's super popular as street food in Thailand. You’ll find it at almost every local market since it's quick and easy to make. The whole dish comes together in about 40 minutes, making it perfect for a quick main dish at home!

 120g 3mm rice stick noodles
 12 medium sized shrimp
 2 Tbsp dried shrimp, roughly chopped
 3 Tbsp vegetable oil
 3 cloves garlic chopped 
 ¼ cup roughly chopped shallots
 85g pressed tofu, cut into small pieces
 2 eggs
 120g bean sprouts
 70g garlic chives, cut into 2” pieces
 ¼ cup roasted chopped peanuts
 1 lime
 Dried chili flakes

 [ Making the Pad Thai Sauce ]

 ( OR you may replace with ready-to-use Pad Thai paste)

 35g palm sugar
 3 Tbsp water
 4 Tbsp tamarind paste
 2 Tbsp fish sauce

1. Soak the noodles for about 50-60mins. 

2. Prepare the sauce: Melt palm sugar in a small pot over medium heat. Once it starts to darken, add all the other sauce ingredients. Bring to a simmer, then turn off the heat. Stir until everything is fully dissolved.

(If using Pad Thai paste as a replacement, mix 2 tbsp with a bit of water before adding it to the noodles.)

3. In a bowl, mix together tofu, garlic, shallots, dried shrimp, and chili flakes.

4. Heat a pan over high heat with a bit of oil. Cook the shrimp or your chosen protein until done, then remove from the pan and set aside.

5. In the same pan over medium heat, add everything from the tofu mixing and sauté until the garlic is golden and the shallots are softened. Add more oil if the mixture starts to look a bit dry.

6. Drain the soaked noodles and cut them in half.

7. Turn the heat up to high and add the noodles and sauce. Toss continuously until all the sauce is absorbed.

9. Once the sauce is absorbed, toss the noodles for an additional minute. Taste them and, if they are not fully cooked, add just a little water and continue cooking until done.

7. Create an empty space in the pan, add a little oil, and crack the eggs into it. Break the yolks and let them cook slightly. Lay the noodles on top of the eggs, then flip and toss everything together to mix the eggs evenly into the noodles.

8. Add the cooked shrimp or chosen protein back into the pan, then toss in the bean sprouts, garlic chives, and half of the peanuts. Turn off the heat and mix everything together.

9. Serve the Pad Thai immediately with the remaining peanuts sprinkled on top. Add a side of extra bean sprouts and garlic chives. Finish by squeezing some lime over the dish before enjoying!
