Thai Cashew Chicken Recipe - EASY ⭐️⭐️

Looking for a quick and flavourful stir-fry? This Spicy Cashew Chicken is packed with tender chicken, crunchy cashews, and coloruful veggies, all tossed in a rich, savory sauce with a hint of heat. Serve it over rice or noodles for an easy and delicious meal!

[ Prepare the Chicken ]
1
.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
2 Tbsp cornstarch
½ tsp salt
½ tsp black pepper

 [ Stir-Fry Ingredients ]

2 Tbsp oil
3 minced garlic cloves
half an onion, chopped into chunks
2 bell peppers (different colors), chopped into chunks
4 dried Thai red chilies, roughly chopped
4 green onions, cut into 1-inch pieces (white and green parts separated)
½ cup cashews

 [ Sauce Ingredients ]

2 Tbsp oyster sauce
2 Tbsp soy sauce
1 tsp dark soy sauce (optional)
1 Tbsp fish sauce
1 Tbsp sugar
1 Tbsp vinegar
½ tsp cornstarch
2 Tbsp water


1. In a small bowl, whisk together all the sauce ingredients and set aside.

2. In a mixing bowl, toss the chicken pieces with cornstarch, salt, and black pepper until evenly coated.

3. Heat oil in a large pan over medium-high heat. Once hot, add the chicken and cook until golden brown and fully cooked through. Stir in the garlic and cook for another minute.

4. Push the chicken to the edges of the wok. In the center, add the onions, bell peppers, white parts of the green onions, and dried chilies. Stir-fry for about 1-2 minutes, then mix everything together.

5. Toss in the cashews and give everything a quick stir. Pour in the prepared sauce and cook for a couple of minutes until everything is well coated.

6. Stir in the green parts of the onions and mix well. Serve hot over steamed rice or your favorite Asian noodles.
