Quick Vietnamese Beef Noodle Soup (Phở Bò) Recipe - MEDIUM ⭐️⭐️⭐️

When it comes to Vietnamese cuisine, nothing beats the iconic beef noodle soup, phở bò! This comforting bowl of goodness is all about the rich, aromatic beef broth, tender slices of half-cooked beef, and chewy rice stick noodles that soak up all the flavours. While some versions include beef balls or tripe, we’re keeping it quick and simple with this recipe. Phở might seem like a challenge to make, but we’ve streamlined the steps to help you recreate the authentic taste at home with ease.

SERVINGS : 2 servings

 

 75 g rice stick noodles
 thinly sliced beef
 1/3 large yellow onion 
 2-inch fresh ginger, unpeeled and halved
 475 ml beef broth
 160 ml water
 0.2 g ground coriander
 1 whole clove
 9 g fish sauce (or less)
 0.5 g hoisin sauce
 0.5 g soy sauce
 0.5 g red chili paste (sambal oelek)
 1/3 cinnamon stick 
 a pinch of Salt
 a pinch of ground black pepper

or use pre-mixed beef noodle soup paste to replace

[ For Garnish]

 1 bunch fresh chopped cilantro
 35 g fresh bean sprouts
 1 lime wedges
 Sriracha hot sauce (optional)
 Hoisin sauce (Optional)

1. Place a large pot over medium heat. Add the onion and ginger pieces, cooking for about 4 minutes, stirring occasionally to bring out their flavours.

2. Add water, broth, coriander, clove, hoisin sauce, fish sauce, soy sauce, sambal oelek paste, cinnamon stick, and a pinch of salt and pepper to the pot. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 30 minutes.

3. While the broth simmers, soak the rice stick noodles for 5 minutes. 

4. Use another pot, add water and cook the noodles for 5 minutes. Drain, rinse under cool water, and set aside.

5. Divide the prepared noodles among serving bowls. Arrange the garnishes and thin beef slices in bowls.

6. Remove and discard the ginger, clove, cinnamon stick, and onion pieces from the broth pot for a clear, aromatic broth.

7. Immediately ladle the hot broth over the beef to make it half-cooked.

8. Customize your own bowl with the garnishes and optional sauces like Sriracha and hoisin sauce for an extra kick.
