Inspired by Thai pandan dishes, Coconut Milk and Pandan Agar Jelly has become a beloved dessert in Hong Kong and Taiwan. This refreshing treat strikes the perfect balance—not too sweet, yet bursting with the rich flavours of coconut milk and the fragrant aroma of pandan. Set in a smooth, gelatin-like texture made from agar (a natural vegan gelatin), it’s a delightful indulgence. [ Making the Coconut Layer ]
16g agar powder
320ml coconut milk
380ml fresh whole milk
400ml water
80g Sugar
[ Making the Pandan Liquid]
30g pandan leaves
150ml water
[ Making the Pandan Layer]
16g agar powder
150ml pandan liquid
950ml water
80g sugar
1 drop pandan essence
1. Coconut Layer: First, mix the sugar and agar powder in a pot. Add the water and fresh milk, and stir well. Heat over medium heat, stirring continuously until it boils and the sugar dissolves.
2. Turn off the heat and immediately add the coconut milk, stirring until well combined (no need to boil again).
3. Pour the mixture into a mold and let it cool. Place it in the refrigerator to set. Once set, take it out and use a fork to lightly scratch the surface of the agar jelly (this helps the two layers stick together better).
4. Green Pandan Layer: Cut the pandan leaves into small pieces and place them in a blender to blend until smooth. Strain the pandan mixture through a fine sieve twice to remove any solid bits.
* Do not blend the pandan leaves for too long, as it can become bitter. Squeeze out as much pandan juice as possible by hand). You should have about 150ml of pandan juice.
5. Mix the 150ml of pandan juice with 950ml of water. If the colour isn't deep enough, you can add a drop of pandan essence and mix well.
6. In another pot, combine the sugar and agar powder, then add the pandan liquid and stir to mix. Heat over medium heat, stirring continuously until it boils, then turn off the heat (continue stirring). Let it cool slightly before pouring it into the mold.
7. Place it in the refrigerator for at least 3 hours to set completely.
