Thai Coconut Chicken Soup (Tom Kha Gai) Recipe - EASY ⭐️

250 g chicken boneless thighs
75 g oyster mushrooms
240 ml chicken broth
175 ml coconut milk
1/2 stalk lemongrass, chop to 2-inch pieces
5 slices galangal
3 slices lime leaves
1 piece Thai hot chili
6 ml fish sauce
2.5 g palm sugar
15 ml lime juice
a pinch of salt
1. Bring the chicken broth to a boil in a medium pot. Add the salt and chicken pieces. Lower the heat and let it gently simmer for 15 minutes.
2. Add the coconut milk, lemongrass, galangal, lime leaves, hot chili, fish sauce, and palm sugar to the pot. Stir gently and simmer for 5 minutes to infuse the flavours.
3. Add the oyster mushrooms to the pot and bring the soup back to a simmer. Cook for another 2 minutes.
4. Turn off the heat and stir in the lime juice. Taste and add more fish sauce or lime juice, if desired.
5. Top the soup with chopped green onions and/or cilantro for garnish. Serve alongside jasmine rice, or spoon the rice directly into the soup for a hearty one-bowl meal.
